Easy Home Made Peanut Butter Stuffed Chocolate Cookies: I am a very chocolate person. Whenever I go for ice cream or any dessert for that matter, it has to be either coffee or chocolate.I am yet to grasp the concept of tutti fruity, strawberry or any other fruit flavor. It’s always like this no? That’s the way we are wired. I think, there is always a person like me, in every group-chocolate only please 😛
Naturally,it is a no brainer -I made chocolate cookies.
But this time with a twist. 😉
Before I go there, a quick question for you. What kind of a cookie person are you? Do you like hard crunchy cookies or ooey-gooey decadent cookies? If you love rich, decadent, gooey…sinfully yummy cookies-This is exactly what you want!
These cookies are super easy to make and will earn you innumerable fans for your baking skills 😉
Ingredients Required for Peanut Butter Stuffed Chocolate Cookies:
- All Purpose Flour 1 1/4 cup
- Regular Sugar 3/4 Cup ( Just pulse it through the grinder to make powdered sugar )
- Regular Cooking oil (unflavored ) 1/2 Cup (You may use butter if you wish, I use oil and it works fine and dandy )
- Good Quality Cocoa Powder 1/2 cup
- In all these measurements,I am using a medium sized mug/cup. Use the same cup to measure everything and you will never make a mistake in proportions.
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- A splash of good quality Vanilla Extract
- 1 medium-sized egg

TIP- For Eggless version, replace the sugar and eggs with condensed milk.
Method of Making Peanut Butter Stuffed Chocolate Cookies :
In a large bowl, sieve together the all-purpose flour or maida, coco powder, baking powder, and salt. Basically all the dry ingredients. Mix them well.
Now for the wet ingredients. I prefer to keep things simple and have a minimum fuss. Simply put the oil, egg, powdered sugar and a splash of good quality Vanilla extract,in the blender.
Pulse on high for 30 seconds and you are done. Its that simple!
Next make a well or a depression in the center of the flour cocoa mixture.Slowly add the blended wet ingredients.Mix well with a spoon.Keep incorporating the sugar and oil mixture little by little. Till a soft dough is formed. At this point I knead it…just a very little bit with ,my hands.
This is the texture and consistency we are looking for. It should break off when pulled apart and should not be sticky or elastic.
Cover this dough with cling film and refrigerate for 2 hours. Refrigerating the cookie dough makes for more crumbly and rich cookies. Plus ,any sort of designs or fillings are best applied on chilled dough. That allows the m to stay.

Once the dough is chilled, now is the time to assemble the cookies!
Just make a small round ball of the chocolate cookie dough. Flatten it between the palm of your hands. Take the peanut dough 1/5 the amount of chocolate dough and flatten it similarly.
Make a depression in the chocolate cookie dough.Place the peanut butter filling in the center,and sandwich the whole thing between another layer of flattened chocolate cookie dough. Seal the ends by pressing them together.
Repeat the process for the rest of the cookies! Here I am making a batch of 7 gorgeous cookies. The rest of the cookies will be ready to make. I put them in an air zapped zip lock bag and freeze them,till the mood strikes next! This way,they will be freshly baked when ever I want-with minimum fuss.
Bake these cookies on 250F oven /convection mode for 15 minutes. They should be still soft but firm when done. If they feel a bit soft to touch,don’t worry. They will harden up once they are cooled.
Let the cookies cool for around 10 minutes. By this time they will have hardened around the edges, will be crumbly and gooey inside.MUCH better than the store bought cookies in texture and in taste. I promise 🙂
